corned beef hash
My grandmother was the consomite contradiction in the kitchen. She would serve veal as a regular weeknight meal… and then the following night pull out a frozen hungry man dinner.
Which is why I grew up obsessed with (and loving) canned corned beef hash. Yes it looked (and smelled) like dog food… but seriously? I couldn’t ever get enough. Seriously brings me back to childhood like nothing else.
So obviously I had to make my own version, and top it with fried eggs. As you do…
Ingredients:
3 1/2 lbs corned beef brisket with seasoning pack
2 cans guiness beer
6 Tbsp butter, divided use
1 pkg hash brown potatoes
3 eggs
salt and pepper to taste
Directions:
Add raw corned beef to large dutch oven with seasoning pack, guiness, and water. Bring to boil and cover. Cook until beef reaches 180 degrees, approx. 2 1/2 hours.
Once beef has cooled, chop into small bite sized pieces.
Heat 2 Tbsp butter in a large cast iron pan.
Add in hash browns. Cook until softened.
Add in corned beef.
Cook until crispy and browned. Top with 2 Tbsp butter. Let melt.
Meanwhile, melt 2 Tbsp butter in a non-stick skillet.
Once butter has melted over medium heat. Crack three eggs. Cook to your prefrence.
I prefer a crispy on both sides egg, with a runny yolk.
Top hash with eggs.
