roasted green tomato avocado salsa
I ran across a can of roasted green tomatoes a while back. It’s a canned product I had never seen, but immediately thought - salsa.
I loved the idea of playing around with a roasted salsa (my fav) but also with green tomatoes versus tomatillos.
Plus, you know me. Can there ever be too many salsa recipes on my website? I think not.
Ingredients:
28 oz roasted green tomatoes
1 tsp ground black pepper
1/2 jalepeno
1 tsp sugar
2 cloves garlic
juice of 2 limes
bunch cilantro, stems removed
1 tsp salt
3 scallions
1 1/2 avocados, rough chopped
Directions:
Combine all ingredients, besides avocados in a food processor. Add in avocados at the end so salsa remains slightly chunky.
