quick and easy weeknight tempura mahi mahi tacos

Want a quick crispy fish taco?

Of course you do.

And this is the easiest way to make your fish taco dreams come true. In the easiest way possible.

Because tuesdays’ can also be busy weekdays.

Ingredients:

1 tsp salt

1 tsp paprika

1/2 tsp white pepper

1 tsp granulated garlic

2 lbs mahi mahi, cut into strips

1 package tempura

avocado oil

taco sized tortillas

guacamole

cilantro

sliced scallions

salsa

Directions:

Mix together salt, paprika, pepper and garlic.

Toss with mahi mahi.

Fill a dutch oven halfway with avocado oil. Heat to 350.

Follow instructions on tempura batter.

Dip fish into batter and coat.

Place fish strips in hot oil. Cook until golden brown on all sides.

Remove to a rack over paper towels.

Heat tortillas.

Spread with guacamole.

Add fish.

Top with slaw, cilantro leaves, scallions and your favorite salsa.

Serve.
