Talk about a quick and easy dinner.

This alambama bbq marinated chicken dinner is as easy as setting it and forgetting it (in the oven, of course).

Yes you have to make the bbq sauce, but that’s about as easy as it gets. And the rest?

A handful of aromatics, any beer you have lying around, spatchcocking a chicken for quick cooking, and let your oven do the rest.

Ingredients:

1 lemon, cut into eighths

2 sprigs of fresh rosemary

handful of fresh thyme

1 whole chicken, spatchcocked

alabama bbq sauce

1 beer, I used stone IPA, since it is what I (always) have on hand

Directions:

Preheat oven to 450. Set a rack in the top third.

In a large cast iron pan, place lemon, thyme, and rosemary.

Cover aromatics with your chicken.

Brush on bbq sauce starting with the underside of the chicken, flipping it so breast side is up for cooking, and marinating that side generously.

Place in oven and cook for about an hour, checking with an instant read thermometer for temp reaching 165 at 45 minute mark.

Cook until internal temp reaches 165.
