buttermilk brined halibut
We love fish around here, there’s no question.
And this is one of my favorite ways to make it.
Ingredients:
2 lbs halibut
pinch of salt
32 oz buttermilk
1/2 bunch italian parsley
1/2 bunch dill
1 small leek, halved, sliced, and washed
1 cup wine
2 Tbsp butter
2 cups stock
1 Tbsp dijon mustard
1/2 bunch dill
4 limes, sliced
Directions:
Marinate halibut by sprinkling salt, and then placing in an oven safe dish.
Add in parsley, half bunch of dill, and sliced leek.
Top with buttermilk.
Let marinade for 4 - 6 hours.
Preheat oven to 400.
Remove halibut from marinade and pat dry. Discard marinade.
In pan, whisk together wine, stock, and dijon. Add back in the halibut.
Top with dill, butter, and sliced limes.
Bake for 30 minutes.
