quick tips: make a superbowl-worthy easy layered chicken dip with del real
How is it almost superbowl already again?
And… most importantly will there be a taylor sighting?!? Apparently if she leaves the second her concert ends in tokyo on the 10th, she’ll have 6 minutes to spare before the game starts… don’t ask me, the internet did the calculations. I’m just here for the food.
And that is why I’m sharing one of my quick and easy football snacks. Made even easier by using del real chicken and rice. Which let’s face it, is my go to, when I don’t have a lot of time to make everything from scratch. Or, don’t want to spend the whole game in the kitchen.
Even if you aren’t into the action on the football fields or in the stands, who wants to spend the day in the kitchen… especially if you tend to have people over to watch, like we do.
You definitely want to be where the action is.
Ingredients:
del real arroz, cooked according to microwave instructions
shredded cheddar & jack cheese
de real chicken, cooked according to microwave instructions
bag of shredded lettuce
pre sliced olives
2 roma tomatoes, diced
1 shallot, diced
del real red salsa
sour cream
guacamole:
1 1/2 avocados, peeled pitted, and mashed
juice of 1 lime
1/3 cup cilantro leaves
1/2 tsp salt
1 clove minced garlic
Directions:
Layer warm rice in the bottom of a bowl. Top with cheddar cheese.
Place warm chicken over cheese. The rice and chicken will melt the cheese.
Top the chicken with lettuce, olives, tomatoes and shallots.
Spoon a large portion onto individual plates and serve with tortilla chips, corn chips, salsa, sour cream and guacamole.
Alternatively you can add extra lettuce and turn into a salad, by letting the chicken and rice cool before adding to the bowl, and serving with a creamy cilantro time salad dressing.
cilantro lime dressing:
Ingredients:
1 tsp dijon
1 egg
1 clove garlic
1 tsp anchovy paste
1/4 cup white vinegar
1/2 bunch cilantro
1 tsp salt
1/4 tsp pepper
juice of 3 limes
3/4 cup avocado oil
1/4 cup creama
Directions:
Add all ingredients to a mason or similar glass jar. Use an immersion blender to combine.
