huli huli chicken

I mean… does it get any better than perfectly flavored, marinated, and basted grilled chicken.

And here’s the tip. Get the chicken cutlets. They’ve been butterflied. And as thus, they are thin. and cook in 6 or so minutes.

Can’t think of an easier or quicker main.

Ingredients:

1/5 lbs chicken cutlets

1/ cup honey

1/ cup ketchup

3/4 cup coconut aminos

1 Tbsp fish sauce

1/2 cup sherry vinegar

1/2 Tbsp dried ginger

3 cloves garlic, minced

1 Tbsp yellow mustard

Directions:

Preheat grill to high.

Whisk together all ingredients, except for chicken.

Reserve 1 cup of liquid.

Put chicken cutlets in a large ziplock bag. Pour remaining marinade over chicken. Refrigerate for 3 hours.

Remove chicken from marinade and pat dry.

Grill for 5 minutes per side (or until 165). Basting each side with reserved marinade; turning every 2 minutes.

Remove from grill, and slice to serve.
