shrimp ceviche

If you’re looking for an alternative for taco tuesday (or tortilla chip topper) look no further than this shrimp ceviche.

The shrimp is cooked by the marinating citrus juices and flavored with tons of fresh veggies. It’s the perfect light meal, or early evening starter snack.

Ingredients:

1/2 lb peeled and deveined shrimp, chopped

1/2 cup white onions, minced

1 heirloom tomato, chopped

1 anaheim pepper, seeded, stemmed and chopped

2 persian cucumbers, peeled and chopped

1/2 bunch cilantro, stems discarded, and leaves chopped

juice of 1 orange

juice of 2 lemons

juice of 1 lime

1 tsp salt

1/2 tsp white pepper

Directions:

Combine all ingredients in a large bowl. Let sit in the fridge 4 - 6 hours before serving.
