chopped salad with creamy basil dressing

It’s salad time! And make it a chop.

Head lettuce, roma tomatoes, crisp cucumbers, just-ripe avocados, and crispy bacon, all topped with a homemade, creamy, basil dressing. It’s like summer in a bowl.

Ingredients:

2 heads of lettuce, outer green leaves chopped, core discarded

3 roma tomatoes, chopped

1 cucumber, peeled and chopped

1 avocado, peeled, pitted and chopped

2 green onions, sliced

6 strips of cooked bacon, crumbled

1 egg

1 clove garlic, smashed

2 green onions, rough chopped

1/2 tsp salt

1 1/2 tsp dijon

juice of 1 lemon

avocado oil

large handful of basil, about 20 leaves or so

Directions:

Combine lettuce, tomatoes, cucumbers, avocado, bacon, and sliced green onions together in a large bowl.

In a 2-cup mason jar, or similar glass container, add egg, garlic, rough chopped green onions, salt, dijon and lemon juice. Add avocado oil to the 1 cup mark. Then add basil.

Use an immersion blender, to slowly combine and emulsify dressing, similar to making mayo.

Pour dressing over salad and toss to combine.
