green beans and bacon
This is not a bean casserole. But it is a truly delectable side dish. And, not being a green bean casserole family (or fan for that matter), it’s a great alternative that we can all get behind.
Not to mention how easy it is. Less than 5 ingredients to boot.
Ingredients:
12 oz haricot verts (the green bean’s skinnier and more flavorful cousin but can sub green beans), trimmed
12 oz bacon, chopped
1 large shallot, peeled and sliced
balsamic vinegar
Directions:
Heat a large cast iron over medium heat. Add chopped bacon and sauté until cooked and fat is rendered.
Remove bacon from the pan, and set aside on paper towels to drain.
Add sliced shallots and beans to pan to cook in bacon fat. Stir to coat, and repeatedly until beans are tender and shallots are translucent. Drizzle with balsamic vinegar right before serving.
