yellowtail salad
Who doesn’t want a good tuna melt or tuna salad sandwich?
I’ve been obsessed with tuna salad sandwiches for as long as I can remember. And unlike being logged into the canned tuna salads of yore- we can now make our own fresh tuna salads that make a melt or salad 100 times better.
Ingredients:
1/2 lb yellowtail
pinch salt
pinch pepper
3/4 cup dry white wine
3/4 cup chicken stock
2 ribs celery, chopped
1 shallot, minced
1/4 cup chopped cucumber
1 Tbsp minced dill
1 tsp dijon
1 Tbsp apple cider vinegar
1/4 cup avocado mayo
1/8 cup sour cream
1/4 tsp salt
1 avocado, pitted, peeled, and halved
Directions:
Preheat oven to 425 degrees.
In an oven safe pan, whisk together pinch of tu
Cook for 15 minutes. Until fully cooked through.
Remove yellow tail from pan, add to a large bowl, and shred using forks.
Add in the rest of the ingredients and stirl to combine.
Spoon tuna salad into two avocado halves.
