triple berry refrigerator jam
Have you seen the berries this summer? Oh my goodness are they amazing right now or what?
And what’s better than turning those berries into an easy refrigerated jam that can be used to make anything better? Over ice cream, waffles, on toast, or by the spoonful.
Ingredients:
1 clamshell blackberries, roughly chopped
1 clamshell blueberries. roughly chopped
1 clamshell strawberries, stemmed and roughly chopped
(Should be at least 4 cups total chopped berries).
juice of one orange
1/3 cup sugar
1 envelope plain gelatin
1/2 cup cold water
Directions:
Add chopped berries, sugar and orange juice to a medium sauce pan. Bring just to a boil and simmer for 5 minutes, crushing berries slightly when stirring. After the first 5 minutes, bring to a full boil and let go for another 3 minutes, stirring the whole while.
In a bowl whisk gelatin packet and cold water. Let stand for 1 minute.
Add gelatin mixture to berries on low heat, whisking until gelatin is completely dissolved (approx. 3 minutes).
Let stand 5 minutes, skimming any foam that appears off the top.
Ladle into jars. Cover, cool slightly, and then refrigerate over night.
Jam should be good 3 - 5 days, although I’m betting it won’t last that long. It doesn’t in my house.
