white beans with spinach
Huge confession… I don’t like beans. Or cooked spinach. Except these cooked beans, with this cooked spinach. It’s deceptively simple, but tastes like a million bucks.
Ingredients:
1 pack of fresh spinach, washed and dried
4 cloves of garlic, minced
3 Tbsp evoo
1 tsp tomato paste
2 cans of white beans drained and rinsed
1/4 cup white wine (can omit of doing whole30)
1 tsp salt
Directions:
In a large sauce pan, bring evoo to heat, until just shimmering.
Turn heat to low and add spinach, stirring to coat with oil. Once spinach has softened and reduced, add garlic and tomato paste. Stir to combine.
Add white beans and wine, stir to combine, and let sauté until liquid has completely evaporated.
Serve.
