rosé bbq’d chicken
One of my kiddos only eats fish and chicken, so any time we bbq anything, I always make sure we’ve got chicken on the side as well. A win-win, since leftover chicken is perfect for any number of lunch time leftovers. However, chicken made the same exact way every time, can get a little boring, so I’m always looking for new ways to fancy up chicken.
And? This rosé marinade is the perfect bbq sauce for summer. Light and tasty, it is delicious immediately off the grill, or over a salad with buttermilk ranch dressing.
Ingredients:
1/2 cup avocado oil
1 cup rosé wine
2 garlic cloves, peeled and grated
1 yellow onion, peeled and grated
1 tsp salt
1 tsp celery salt
1 tsp white pepper
1/2 tsp dried thyme
1/2 tsp dried italian parsley
1 Tbsp fresh rosemary, minced
6 chicken breasts
DIrections:
In a large bowl, whisk all ingredients together, except chicken.
Add chicken to bowl, and coat with marinade, reserving 1/2 cup of mixture for basting.
Let chill for 3 hours.
Remove from fridge.
Grill on medium, brushing chicken with the leftover sauce while grilling.
