Beer, cheese, and bacon. Can you think of a better combo? I can’t. It’s the perfect chip dip trifecta. And, what you should be making this sunday for super bowl. It’s definitely a yearly favorite around here.

Ingredients:

1 10oz pack of bacon, diced in small 1/2 squares

6 scallions, sliced and separated white and green parts

4 cloves of garlic, minced

1 12oz bottle hoppy beer, stone ipa is a favorite over here

1 tsp salt

1 1/2 tsp ground mustard

1/3 cup coconut milk

6 cups shredded cheddar cheese

Directions:

Preheat oven to 350.

Using a cast iron skillet, sauté bacon until crispy, and fat has been rendered. Remove bacon and set on a paper towel to dry.

Add the scallion whites and garlic to bacon fat, sautéing until soft, but not letting the garlic brown or burn.

Add beer, mustard and salt. Reduce mixture for 20 minutes.

Add coconut milk and cheese. Stir to melt and combine.

Place in oven until bubbly, about 20 minutes. Top with scallion greens and bacon bits.

Serve with chips of your choice.
