cuban avocado salad

Yes, this is basically an avocado salad… we can dispense with the cuban if we must. However, this is based on a traditional cuban avocado salad, to be served alongside mojo pork. The problem is, it’s just too good to only eat it that way.

If you are a huge fan of avocado, like we are… then this is the salad you will want to be having along side everything.

Fresh, bright, a little spicy, some crunch, a little sweet, and definitely creamy.

Ingredients:

2 avocados, sliced

1 shallot, thinly sliced

1/2 jalepeno, thinly sliced

1 mango, sliced

1/3 cup avocado oil

1/4 cup champagne vinegar

1/3 cup orange juice

1 tsp dijon mustard

1/2 tsp of salt

1/2 tsp sugar

1/4 tsp pepper

Directions:

Gently toss together avocado, onion, jalepeno, and mango.

In a mason jar combine oil, vinegar, juice, mustard, salt, sugar, and pepper. Shake until combined. Pour over salad.
