potato and green bean salad

Pretty sure you can’t go wrong with a potato salad for any occasion.

And especially this potato and green bean salad with an herby sour cream dressing and tossed with shallots and pine nuts.

Just saying.

Ingredients:

1 cup sour cream

handful italian parsley leaves

3/4 oz container chives, chopped

1 Tbsp dijon mustard

1/4 cup grated parmesan cheese

1 tsp salt

2 packages mixed peewee potatoes, cooked until fork tender

2 cups sliced, cooked french green beans

1 shallot, thinly sliced

2 oz pine nuts

Directions:

In a large bowl, whisk together sour cream, chives, parsley, dijon, parm, and salt.

Add in potatoes, green beans, shallots,, and pine nuts.

Use a spoon to toss until vegetables are coated.
