grilled ribeye with whipped goat cheese
What do you get when you season 2inch thick ribeye steaks, grill them to a perfect med-rare, and then slather them with a whipped goat cheese?
Only the tastiest, most tender bite of meat ever.
Typically when you grill (or pan fry, or oven bake) steak, you remove it from the cooking source before it comes to temp, and let it rest. Pro tip, is to put a couple of pats of butter on top, while you do so, and let it melt all into the steak. Pro pro tip? Top with spoonful’s of whipped and flavored goat cheese, and let it melt all over your steak. I’m telling you, the flavor profile just can’t be beat.
Ingredients:
2 2-inch ribeye steaks
salt and pepper
avocado spray
8oz fresh goat cheese
zest of 1/2 lemon
juice of 1/2 lemon
1 clove garlic
1 1/2 Tbsp fresh dill
1 1/2 Tbsp fresh oregano
1 scallion, chopped
1 Tbsp avocado oil
1 tsp honey
2 pinches of salt
Directions:
Preheat grill to medium-high heat.
Using a heavy hand season all sides of the steaks with salt and pepper.
Let rest outside of fridge for 20 -30 minutes before grilling.
Spray grill with avocado oil.
Cook for about 6 minutes on each side.
Remove from grill
