Girl dinners are all the rage on social media, and to be honest… i’m not really sure why they are calling it that…
It’s basically monday. Sorry, not sorry.
But it’s what happens when you are cleaning out the fridge, and you want to use up the last of your perishables before they go bad. Resulting in a charcuterie board of snacks, a random salad, or, in my case… an egg scramble. That’s my favorite monday night meal, when the kids aren’t hungry, are out for sports, and I have a whole lot of veggie remnants from the previous week I want to use before I order new groceries for the week.
A few mushrooms here, a half of zucchini there. A handful of cherry tomatoes, and a leftover green onion. All sliced up and added to evoo until softened. But you use whatever veggies you have on hand. You can even thrown in canned artichockes, waterchestnuts, olives, or hearts of palm, if you so desired.
Just whisk up some eggs, and add to your veggies.
I like to serve with a handful of chips, my favorite trader joe’s salsa, sour cream, and a glass of rose.
That’s my kind of girl dinner.
Oh, and don’t forget to serve on paper plates, so you don’t have any additional dishes to wash.
