little gem, pear, and marcona almond salad with a sesame labneh dressing
Looking for something other than your typical green side salad - you know, the one with cucumber, tomatoes, maybe some shaved carrots?
Look no further than this little gem salad that’s topped with all the good things. Pears, marcona almonds, cucumbers and avocado.
Topped with fresh dill and grated parm, then drizzled with a sesame labneh dressing.
And believe me, it tastes as good as it looks.
Ingredients:
1/2 cup labneh
juice of 1 lemon
3 Tbsp sesame oil
3 Tbsp honey
1 1/2 Tbsp sesame seeds
2 heads of little gem lettuce, leaves removed
1 bosc pear, pitted, stemmed, and sliced
handful roasted marcona almonds
1/4 english cucumber, peeled, halved and sliced
1/2 avocado, peeled and sliced
freshly grated parmesan
fresh dill
Directions:
Add labneh, juice, oil, honey, and sesame seeds to a glass jar. Use an immersion blender to purée.
Spread little gem leaves all over a platter, top with pear, almonds, cucumber, and avocado.
Grate parm over the top.
Sprinkle with fresh dill.
Drizzle with dressing.
