quick tip: turn leftover salmon into spicy salmon nori tacos

Wanna taco ‘bout the best sushi tacos for non raw fish lovers?

This is a great way to utilize leftover salmon (if you ever have any). Conversely, if you love them as much as we do, you could just cook some salmon just for this purpose.

You need some strips of nori (just cut the large sushi sheets in taco shell portions). Pickled cucumbers and shallots, fresh cilantro, sliced avocado, sushi rice, and scallions.

Then to every cup or so of cooked salmon, you want to mix 1 Tbsp minced shallots, 1 1/2 Tbsp rice wine vinegar, 1 Tbsp soy, 2 Tbsp kewpie, and 1/2 Tbsp sriracha.

Top the nori tacos with rice, salmon, slice of avocado, and then the remainder of the toppings.

Quick, easy, and delish lunch or dinner.
