quick tip: wild grain box for the most excellent (and easy) ice cream sandwiches
Have you heard about the wild grain box? If you haven’t, you need to. It’s a subscription service that provides you with a box of all the grains you could want… think pasta, bread, croissants, cookies, etc.
And it’s genius.
Everything is par baked; and you just cook the rest from frozen.
Literally the perfect hack to have on hand.
And my fav? Homemade ice cream sandwiches made easy.
All you do is follow the instructions on baking - I like to trim the ends off the cookies and save them for a snack for later and to make the sandwich an easier size to manage.
Set out the ice cream about 10 minutes before making the sandwiches so easy to spoon.
I like peach ice cream and salted caramel with snickerdoodles… both play really well with the cinnamon sugar.
Spoon about an inch and a half thick portion of ice cream all the way to the edge of one cookie.
Top with another cookie and freeze before serving - at least 15 minutes.
