javier's knockoff salsa verde

Y’all know how much we love taco tuesday around here. So much. But we also love going out for mexican food as well. There is just something about chips and salsa at a restaurant that just hits differently.

One of our favorite spots, and favorite salsas is the green salsa served with the tablitas from javier’s. It’s such a fave that we would be there all the time, if I hadn’t created my own version. Now I just have to have the right ingredients.

Ingredients:

1/2 avocado

6 tomatillos, peeled, washed, and quartered

3 scallions, white and light green parts

1 poblano pepper, stemmed and seeded

1/2 bunch cilantro

2 cloves garlic

juice of 2 limes

1/2 Tbsp black pepper

1 tsp salt

Directions:

Add all ingredients to a food processor. Pulse until combined and broken down.
