crispy halibut

File this under the “this is easy” button.

Halibut. Quickly cooked in a cast iron skillet. Get your fish from a fishmonger you trust and you don’t need anything but a little salt and pepper - let the fish speak for itself. It’s literally that easy.

Ingredients:

evoo

1 lb halibut, cut into 4 pieces

1/2 tsp salt

1/4 tsp white pepper

Directions:

Coat the bottom of your cast iron skillet with evoo.

Sprinkle salt and pepper over halibut pieces.

Turn heat to medium high. When evoo is shimmering. Add halibut.

Cook until halibut is golden brown on both sides and cooked through. About 5 - 7 minutes per side.

I like to serve over a warm cast iron corn salad and along side my cucumber and tomato milano’s salad.

This would be excellent over pasta. With tempura veggies. Or just plain on a salad.
