quick tip: make your own breakfast burrito

This is such an easy weeknight meal. And a great way to make sure that everyone one gets something they want to eat.

Breakfast for dinner has long been a favorite of our family. The kiddos absolutely love it. As do we.

And when breakfast for dinner meets taco tuesday it’s dinner on a whole other level.

Just love it.

Make some eggs, bacon, and sausage, pull together a some veggies, salsa, sour cream, and cheese, give everyone their own tortilla and let them have it.

Ingredients:

1 pack bacon, cooked

1 package chicken and/or pork breakfast sausages

shredded cheddar

diced tomatoes

sliced avocados

sliced olives

1 dozen eggs, scrambled

3 scallions, sliced

handful of cilantro leaves

package of burrito sized tortillas

Directions:

Heat tortillas in a non-stick skillet over medium heat until warmed.

Place single tortillas on top of a square of tin foil.

Let everyone add toppings of their choice.

Wrap up individual burritos.
