grilled potato salad
I always love having a potato salad when throwing a bbq, watching football, going on a picnic, etc.
So why not keep everyone on their toes and do something a little different.
This potato salad is grilled, all ingredients mixed in a grill safe pan, and left on the grill until potatoes are soft and coated in flavorful yumminess.
Ingredients:
4 Tbsp ghee
1 Tbsp chopped tarragon
2 cloves garlic, minced
16 oz peewee potatoes, halved
2 Tbsp mayo
1 Tbsp sour cream
2 tsp whole grain mustard
1 tsp dijon mustard
2 Tbsp rose vinegar
Directions:
Heat grill to medium high heat.
Place all ingredients in a grill safe pan. Cover.
Set on grill, and consistently shake to combine ingredients and prevent sticking.
Cook until potatoes are easily pierced with a fork.
