blat pasta salad

I mean, who doesn’t want a creamy balsamic salad dressing smothering their pasta salad… that’s incidentally full of all the things one loves on their blt.

Just saying.

Perfect potluck, bbq, or party side.

Or, ya know. A stand alone main course.

Kinda the best.

Ingredients:

5 cups cooked fusilli pasta

8 strips cooked bacon, torn into pieces

1/3 cup chopped red onion (soak in water for 1 hour before using)

1 cup halved cherry tomatoes

handful of italian parsley, stems removed and chopped

16 basil leaves, thinly sliced

1 avocado, peeled, pitted, and chopped

1 handful arugula

1/2 cup creamy balsamic dressing:

1/2 cup balsamic vinegar

1/4 tsp pepper

1 tsp salt

1 tsp sugar

1 tsp dijon mustard

1 tsp trader joe’s onion salt

1/8 cup avocado mayo

1/3 cup avocado oil

combine all ingredients together by whisking or with an immersion blender

Directions:

Add all ingredients to a large bowl.

Add in 1/2 cup of the balsamic dressing.

Toss to combine.

Refrigerate until serving.
