mai tai
So, I know that tiki drinks and speakeasys are all the rage right now. Don’t get me wrong, I’m not against it. The problem I have, is that I’ve developed an adult latent allergy to pineapple. And almost every drink in all of these venues is made with pineapple. Unfortunately… I can’t be here for it.
But, what I can do, I make my own tiki drinks - most especially the mai tai, in the traditional way (albiet with my own twists) without making it “new again” by adding in pineapple.
So here you have it, my take on the traditional mai tai. Sans pineapple, as it was created to be.
Ingredients:
4 oz jamacan rum
1 oz grand marnier
1 oz orgeat syrup
2 oz fresh squeezed lime juice
1 oz honey simple syrup
1 Tbsp honey
1 Tbsp water
heated until honey has dissolved into water
grenadine
2 slices of fresh lime
Directions:
Fill two tom collins style glasses (or tiki glasses) with ice
Combine all ingredients in a shaker. Add ice until full.
Shake until liquid is combined, and ice cold.
Strain into two glasses.
Top with grenadine float if desired, and a lime slice as garnish.
