sangria style strawberry rhubarb margarita
It’s about that time… cinco de mayo time that is. And I don’t know about you, but spring is (finally!) bursting around here…
I’m so happy to get some new seasonal flavors to play with in the kitchen. So I got started thinking about my favorite spring foods. One of which is a strawberry rhubarb pie. Then I started thinking about how good a classic fresh strawberry margarita is and wondered why I haven’t married the two together before.
And thus my sangria style strawberry rhubarb margarita was born.
Ingredients:
1/2 cup granulated sugar
1/2 cup water
1 stalk rhubarb, thinly sliced in half moons
2 limes, sliced
15 strawberries, stemmed and sliced
1/4 - 1/2 jalapeño sliced, depending on spice preference
12 oz blanco tequila, I use teremana
juice of 6 limes (about 4 - 5 oz)
30 oz club soda
Directions:
Whisk together sugar and water. Bring to a boil, whisking occasionally until suar has dissolved.
Add rhubarb to a pint glass. Pour simple syrup over rhubarb. Set aside to cool.
Add sliced strawberries, limes, and jalapeños to a pitcher. Once rhubarb simple syrup is cool, pour over fruit.
Add tequila to the pitcher. Stir to combine.
Place in fridge for 4 hours prior to serving.
Add lime juice and club soda, stirring to combine, before serving.
