air fried holiday cauliflower

Another day, another cauliflower recipe. I know. But it’s just so good, and cauliflower is such a perfected vegetable that lends itself to all sorts of flavor profiles. Making it perfect for all occasions.

And as we head into the winter holiday, you might just be on the look out for a perfect holiday dish for your next gathering.

And this, would be it.

Ingredients:

1 head of cauliflower, cut into florets

1/4 cup evoo

3/4 tsp salt

1/4 cup pine nuts

2 tbsp pomegranates

handful chopped italian parsley

Directions:

Preheat air fryer to 425.

Toss cauliflower with evoo and salt. Air fry for 15 minutes, shaking occasionally.

At 15 minutes, add pine nuts to cauliflower. Air fry for an additional 5 minutes.

Pour cauliflower and pine nuts into a serving dish, and toss with pomegranates and parsley.

Serve.
