creamed corn
Looking for an alternative to grilled corn? Look no further than this creamed version.
Made on the stove top, and amped up in flavor thanks to leeks, garlic and a mash-up of dairy, its rich taste belies its simplicity.
Ingredients:
4 Tbsp butter
1 leek, halved, sliced and washed
1 garlic clove, minced
4 corn cobs, kernels removed
1/4 cup cream
1/4 cup milk
1 tsp salt
Directions:
Melt butter in a saucepan over medium heat.
Once butter has melted, add leek and garlic. Stirring for 2 minutes, to soften.
Add corn kernels and salt. Stir to combine and cook for 3 minutes.
Add cream and milk. Bring to a boil.
Once boiling, turn heat down to simmer. Cook 5 - 10 minutes, until corn is cooked through, and liquid has thickened.
