mango salsa

You know we are no strangers to salsa in this house. Infact it’s the most sought-after late-night snack ‘round here. Also, why we never have much on hand, despite making (and purchasing) it on the regular.

I like varying my salsa’s depending on what protein I’m cooking for taco tuesday, and this mango salsa is not only super easy, but lends itself perfectly to lightly grilled fish, shellfish, or simple chicken. I mean, honestly, it’s delicious with steak too. So, there’s that.

Ingredients:

1 avocado, peeled, pitted, and chopped

1/2 onion, peeled and minced

2 cups chopped mango

1/2 cup chopped cilantro leaves

1 tsp salt

juice of 2 limes

Directions:

Using a spoon, gently stir all ingredients together until just mixed.
