red, white, and blue grilled potato salad

Can you really have too many potato salad recipes in your repertoire? Of course not. There are way too many occasions to use them. Potlucks, bbq’s picnics, holiday weekends. And if you tend to entertain the same people at all the occasions, what’s wrong with changing things up once in a while.

Ingredients:

1.5 lbs red, white, and blue baby potatoes, halved or quartered into same sized pieces

3 Tbsp evoo

1 tsp paprika

1 tsp trader joes onion salt

1/2 tsp salt

1/2 cup celery hearts and leaves, chopped

1 Tbsp chives, chopped

1 1/2 Tbsp capers, minced

2 1/2 Tbsp cornichons, chopped

1 Tbsp ground mustard

1 Tbsp red wine vinegar

Directions:

Preheat grill to medium heat.

Toss potatoes with evoo, paprika, onion salt, and salt. Place in a grill safe pan.

Grill, shaking occasionally, until potatoes are tender and easily pierced with a fork.

In a large bowl combine all ingredients and toss until fully combined.
