quick tip: easy sesame grilled veggies
I’m so excited that it’s grilling weather again. Not that I don’t periodically grill during the winter, but it’s just not the same as spring/summertime grilling.
This is an easy side of veggies to grill via skewers. The key to grilling things on skewers, is that as pretty as it looks changing up different veggies or meats, you need to grill the same food on the same skewer. That ensures your food will be cooked evenly and you won’t have a mushy piece of zucchini next to an undercooked piece of onion.
My second quick tip for grilling vegetables is that you want to maximize the surface area that hits the grill. That means when you cut zucchini into rounds, you don’t stack those rounds on top of one another like a giant green crayon. Nope, you skewer them like coins, lying next to each other. Same goes for mushrooms.
Trust me, you’ll never skewer things any other way, once you taste how much more flavorful these are.
Ingredients:
1 clamshell shiitake mushrooms, stems removed
2 zucchinis, tops and bottoms removed, sliced in to 1/2 inch rounds
2 Tbsp sesame oil
1/2 tsp salt
Directions:
Preheat grill to medium high.
Skewer vegetables horizontally, keeping the same vegetables together. Grill for approx. 5 minutes a side, and veggies are softened and cooked through.
