mashed potato burrito

So, growing up in la jolla, one of my favorite breakfast spots has always been the cottage. For 30+ years now.

One of my favorite breakfast items they had on the menu (it’s no longer there now, but if you ask, they will usually make it for you anyway) was the mashed potato omelet. It sounds off, but it was delicious.

Mashed potatoes, bacon, scallions and cheddar cheese inside an egg omelet and topped with sour cream and fresh avocado. Perfections.

So of course, I needed to create my own verson. And I did it in breakfast (or breakfast for dinner) burrito form.

Super easy to do, I make a point to make them anytime we have leftover mashed potatoes.

Ingredients:

mashed potatoes, warmed

scrambled eggs

cheddar cheese

bacon, cooked

scallions, sliced

avocado, sliced

sour cream

tortillas

salsa

Directions:

Place a burrito sized tortilla on a flat surface. Spread a couple of spoonful’s of mashed potatoes over 1/2 the tortilla, leaving edges empty. Add a few strips of bacon, slices of avocado, a spoonful or two of eggs, and a handful of cheddar cheese. Add scallions, sour cream and salsa as you prefer.

Roll tortilla into a burrito by folding sides in and rolling toward the empty part of the tortilla. Use a toothpick to secure.

Microwave for 30 seconds to warm tortilla and melt cheese.
