chopped italian salad
I could eat salad every day. And I pretty much do. Just saying.
It’s also an easy dinner side that makes everybody happy.
This one is super easy, quick to put together, and family pleaser. Especially when paired with my
homemade italian salad dressing.
Ingredients:
1 head of lettuce, chopped (I prefer either head lettuce or romaine)
1 clamshell cherry tomatoes, halved
1 cucumber, halved and sliced
1 avocado, pitted, peeled, and chopped
1 green bell pepper, stemmed, seeded and chopped
1 handful black olives sliced
1 handful pepperoncinis, sliced
1/3 cup evoo
1/2 cup white wine vinegar
2 Tbsp grated parmesan
juice of 1/2 lemon
2 tsp local honey
1/2 tsp salt
1 tsp trader joes onion salt
1 tsp dried parsley
1 tsp dried basil
1/2 tsp dried oregano
1/4 tsp ground black pepper
Directions:
Combine evoo, vinegar, parmesan, lemon, honey, salt and spices in a mason jar. Shake until combined.
Combine lettuce, tomatoes, cucumbers, bell pepper, avocado, olives and pepperoncinis in a large bowl, and toss with dressing.
