traditional gazpacho
Gazpacho is truly the unsung hero of fruits and vegetables.
Who knew that pureeing fresh produce could produce such a perfect starter course. Or, in the full dregs of summer heat, main course.
There is nothing else that tastes so completely fresh.
Or refreshing.
Ingredients:
4 heirloom tomatoes
1/2 red bell pepper
1/2 anaheim pepper
1 cucumber, peeled
1 clove garlic
1 small onion, peeled
1 tsp honey
1 tsp salt
2 tsp balsamic vinegar
2 Tbsp evoo
1/4 cup water
Directions:
Chop all vegetables in 4ths. Add to vitamix or blender.
Add remaining ingredients.
Puree until smooth.
Drizzle with additional balsamic and evoo, and sprinkle with maldon salt, before serving.
