broiled mushroom burgers
We love a good burger around here. And we certainly don’t let colder weather stop us from enjoying them. When it’s too cold to grill outdoors, we heat the broiler instead.
These burgers take advantage of sauteed mushrooms, white american cheese, avocado, and a dijon aioli. Perfect flavor bomb right there.
Ingredients:
3 Tbsp mayo
1 Tbsp dijon mustard
avocado spray
1.5 lbs ground beef, divided into 4 equal patties
trader joes onion salt
2 Tbsp evoo
4 oz sliced shitake mushrooms
4 burger buns
1 avocado, peeled, pitted, and slice
4 slices white american cheese
Directions:
Turn the broiler on high (550 degrees) and place the top shelf about 4 inches from the top.
In a bowl whisk together mayo and dijon. Set aside until making burgers.
Heat evoo on low. Add mushrooms, and sauté until softened. Set aside until making burgers.
Roll burgers into a ball and flatten. Make sure to depress the center with your thumb.
Sprinkle on both sides with onion salt.
Line the inside of a broiler pan with tin foil. Spray the top with avocado oil.
Lay your burger patties out on the top of the broiler pan. They can be placed close to one another, but don't allow them to touch.
Broil on high for five minutes, or until burgers have browned. Flip burgers over and broil on high for an additional 4 minutes. Top with cheese slices and broil for one additional minute- making sure to keep a close eye on the oven - cheese can go from perfectly melty to burnt in a matter of seconds when it's under the broiler.
Spread aioli on both sides of each bun. Top with burger, mushrooms, and avocado, and top bun.
