whipped sweet potatoes

Whipped sweet potatoes are a great alternative to mashed potatoes. And while I’m not die-hard sweet potato fan, I will eat these by the bowlful.

Ingredients:

6 large sweet potatoes

evoo

salt

1 Tbsp honey

7 Tbsp butter

1/2 tsp cinnamon

1/2 tsp salt

Directions:

Pierce each potato with a fork, then rub with evoo and sprinkle with salt.

Wrap potatoes individually with tin foil.

Bake in the oven at 400 degrees, or on the grill, until tender and easily pierced by a fork. 45 - 60 minutes.

Scoop out potato flesh from skin and add to food processor.

Add honey, butter, cinnamon, and 1/2 tsp salt. Puree until smooth.

Serve while warm.
