classic stuffed burger
Another holiday weekend bbq calls for another burger recipe, and this one is a killer. Like so good it knocks you over dead from the deliciousness.
Seriously. I wasn’t sure if what I envisioned in my head would work in execution and the kids weren’t sure if they wanted to try it, period. But it did, and we did, and they did, and now, we might only make/eat burgers this way from the rest of time.
There’s just something about taking the classic flavors of a burger and bringing them together in an unexpected way.
Ingredients:
2 lbs ground beef
2 Tbsp evoo
1 onion, minced
1 clove garlic, minced
1/2 tsp salt
6 tillamook medium cheddar snack cheese pieces
trader joe’s onion salt
8 Tbsp ketchup
1 Tbsp mustard
3 cups shredded lettuce
3 Tbsp mayo
dill pickle rounds
Directions:
In a medium bowl, toss shredded lettuce with mayo. Set aside.
In a small bowl, combine ketchup and mustard. Set aside.
Heat evoo in a small sauce pan on medium high heat. Add onion, and turn heat down to medium low, stirring to prevent onions from burning. Keep stirring occasionally. Once onions start turning color, add garlic and 1/2 tsp salt. Continue to stir over heat until onions have caramelized. Remove from heat and let cool.
Preheat grill to high.
Divide ground beef into 12 equal rounds. Flatten patties out, placing a slice of cheese and 2 spoonful’s of onion mixture in the center of 6 patties. Cover with a second patty, pinch edges together and round into burgers.
Conversely you could also divide beef into 6 equal rounds, flatten, place cheese and onion mixture in center and form a patty around them, by bringing the outside together on top of stuffing. Whatever makes more sense and is easier for you to do.
Sprinkle onion salt all over each burger. Around 1/2 tsp per burger.
Grill burgers about 5 minutes per side, let rest on top shelf of grill for another 5 minutes.
To prepare burger, spread ketchup mixture on bottom bun, top with pickles, then burger. Top with lettuce and bun. Prepare to be wowed.
