chorizo queso stuffed bell peppers
While queso fundido is prolly one of my favorite foods; sometimes I wish it was more vegetable forward, and didn’t rely so much on tortillas or chips as a vehicle for getting the cheese to my mouth.
Which is how i came up with these queso and chorizo stuffed baby bell peppers as the perfect alternate starter.
Think jalapeño poppers, except the spice is inside the pepper, instead of the pepper itself.
Ingredients:
12 baby bell peppers, stems and seeds removed keeping pepper intact
queso fundido blanco
chorizo
2 Tbsp avocado oil
Directions:
Bring oil to medium high heat in a large cast iron skillet.
Stuff each pepper with both queso and chorizo. I typically do a spoonful of queso, then a spoonful of chorizo, then a second spoonful of queso.
Pan roast each pepper on all sides, until peppers have softened and just started to brown.
Serve immediately.
