lindsay's pea salad

I am convinced that peas are the most underrated vegetable out there… and i’ve made it a personal mission to celebrate the pea this year with all different recipes highlighting one of my most favorite vegetables.

And the keystone recipe in this collection? Is my famous pea salad. I pretty much serve it at every family and friends bbq we throw. It’s the summer holiday staple that everyone loves.

Ingredients:

24 oz of frozen (or freshly shelled) peas

8 slices of cooked bacon, crumbled

1 large shallot, minced or sliced depending on your onion flavor preference

1/4 cup mayo

juice of one whole lemon

1-2 Tbsp fresh dill

1/2 tsp salt

1/4 tsp granulated garlic

1/4 tsp white pepper

Directions:

Bring a large pot of water to boil, blanch peas for 3 (fresh) to 5 (frozen) minutes, remove to ice water bath to stop cooking and to preserve green color. Chill.

In a large bowl toss peas, bacon and shallots.

In a small bowl whisk together mayo, lemon, dill, salt, garlic and pepper. Pour over peas, and carefully stir to combine.
