Chimichurri is one of those versatile sauces that doubles as a dip or dressing depending on what you serve with it. Thanks to it’s herbaceous and bright flavor profile, it works equally well with steak, chicken or shrimp dishes.

While you can easily change up the herbs, vinegar, and extras depending on what you are serving it with, this is a more traditional and classic version.

Ingredients:

1 bunch cilantro, approximately 1 cup of leaves

1 bunch italian parsley, approximately 1 cup of leaves

1/2 cup oregano leaves

1 shallot, rough chopped

3 cloves of garlic

1 tsp salt

1/2 tsp black pepper

1/2 cup avocado oil

1/4 cup red wine vinegar

juice of 1 lime

Directions:

Combine all ingredients together in a high powered blender.
