soft chocolate chip cookies
I’ve always wanted to be the kind of mom who has chocolate chip cookies waiting for her kids when they come home from school… but 4 kids in 4 years? You sorta throw your plans out the window. Not to mention, that while I can write the recipes; my baking execution has never been quite as stellar as cooking anything.
That being said… i do have several desserts in my repertoire that I can make and execute perfectly, however chocolate chip cookies were never one of them. Until kiddo number four came a long and not only had a love of baking, but could execute any recipe I created exactly how it was intended. And now she, has chocolate chip cookies ready for us on the regular.
And this recipe is such a good one. The addition of grated chocolate, chocolate chunks, and finely ground oats take your basic chocolate chip cookie to a whole new level.
Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla paste
2 cup flour
2 1/2 cups oats
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
12 oz chocolate chunks
4oz milk chocolate bar, grated
Directions:
Preheat oven to 375.
Cream butter and two types of sugars in a stand mixer.
Add eggs and vanilla, beat until combined.
In a food processor or blender combine flour, oats, salt, baking powder and soda until powdered.
Add flour mixture to stand mixer. Mix until combined.
Sit in chocolate bites and grated chocolate.
Use a scoop to create slightly smaller than golf ball sized rounds. Place on an ungreased cookie sheet approx 2 inches apart.
Bake for 10 minutes.
