summer white peach salsa

I just love stone fruit season. I love the versatility of being able to use them in both sweet and savory dishes, but most especially in savory dishes. The pop of sweetness just adds that extra flavor boost you can’t get using alternative sweeteners.

You can pair this salsa with chips, chicken, or steak, but I think it’s the absolute best when served with seafood.

Ingredients:

1 yellow heirloom tomato

3 white peaches

1 shallot

1 bunch cilantro

1/2 large or 1 small jalapeño, stemmed and seeded

1/2 tsp salt

juice of two limes

Directions:

Combine all ingredients in a food processor and pulse until combined, but still somewhat chunky.
