If you haven’t been drunk at 2am and stumbled into a local taco shop for a california carne asada burrito, then you haven’t lived.

It’s the ultimate late night snack. And a san diego rite of passage.

Ingredients:

2 lbs of skirt steak

seasoned salt

avocado oil spray

salsa

guacamole

fries

(while I have linked my homemade versions above, feel free to use your favorite store bought varieties)

1 cup cheddar cheese

4-8 burrito sized tortillas

Directions:

Preheat grill to high. Spray with avocado oil.

Sprinkle steak with seasoned salt on both sides.

Grill steak for about 5 minutes per side.

Remove from grill and let rest for 15-20 minutes, while you prepare the rest of your ingredients.

After steak has rested, slice against the grain, into bite sized pieces.

Fill each tortilla with a large spoonful of both guacamole and salsa.

Top with a handful of warm french fries, and sprinkle with cheddar cheese. Add a handful of steak pieces.

Tightly roll tortilla by folding in ends, and creating a burrito. Wrap with tin foil to help burrito keep its shape. Slice in half and serve.
