butterscotch brownies (blondies)

Don’t be fooled, while butterscotch is in the name, this is actually a traditional blonde brownie, or blondie. Not to be confused with a chocolate brownie that has butterscotch chips inside it (although equally as tasty).

Blondies are also referred to as butterscotch brownies, because of their use of brown sugar and melted butter. And in the case of this recipe brown butter.

Less gooey that a brownie, and more like a cookie bar, they are sure to be a huge hit.

Ingredients:

3/4 cups unsalted butter

2 cups brown sugar

2 eggs

1 tsp vanilla paste

2 cups flour

1/2 tsp baking soda

1/2 tsp salt

Directions:

Preheat oven to 375.

In a sauce pan, melt butter on medium-low heat, until it turns a golden brown. Turn heat to low, and add in brown sugar. Turn heat back up to medium, stirring constantly until sugar and butter are combined, and mixture turns slightly darker.

Add the sugar and butter mixture to the bowl of a stand mixer and let cool slightly.

Add egg and vanilla to the mixer. Using the paddle attachment, beat well to combine.

In a separate bowl, whisk together flour, soda, and salt. Add to creamed mixture in 1 cup increments.

Spread into a greased jelly roll pan (16 x 11 inch).

Bake for 15 - 20 minutes, until a toothpick is able to be inserted and removed, completely clean of batter.
