I know, I know… if your childhood was anything like mine, you probably have nightmares about the amount of vegetable shortening required to make homemade cookies. In fact, it was one of the first things I eliminated from recipes when I started to make old ones over with cleaner ingredients.
However, when it comes to homemade tortillas, it’s an absolute must if you want to get the texture and taste just right.
Unless you want to use straight lard. Or duck fat. But that is a whole other discussion for a different day.
