hot artichoke dip

It’s almost super bowl time… and as much as I love the game, and the commercials, what I really love, is the food. I love making food commiserate with the feeling that watching the big game evokes. And, lets face it, I love any sort of themed food spread.

To serve an epic super bowl, or any potluck/bbq, feast… you must have an epic starter. One that will appeal to everyone, and that has lots of different components (also known as dippers).

A warm, gooey, cheese artichoke dip checks all those boxes. Serve it with sliced baguettes and a variety of veggies and you’ve got an app that everyone will dive into.

Ingredients:

2 Tbsp butter

2 Tbsp ap flour

1 tsp salt

1/2 cup whole milk

1 cup shredded jack cheese

1/2 cup parmesan cheese

2 cans artichoke hearts, chopped

1 cup mayonnaise

3 oz cream cheese

1 Tbsp dried dill

1 clove garlic, minced

1/2 cup pork panko

Directions:

Preheat oven to 350

In an oven safe dish ( I use a 10 inch cast iron skillet) melt butter. Add flour 1 Tbsp at a time, and whisk to combine. Cook over medium high heat, whisking all the time, to cook out flour, and until roux turns a golden brown. Season with salt.

Add milk in 1/8 cup increments, whisking until liquid is absorbed. Add jack cheese and 1/2 the parmesan, and whisk until melted and combined.

Stir in additional ingredients- artichokes, cream cheese, mayonnaise, dill, and garlic.

Mix the pork panko with the remainder of the parmesan, and sprinkle mixture on top.

Transfer hot pan to the oven, and bake until bubbly, and golden brown… approximately 25 minutes.

Serve with your favorite dippers.
