chinese sausage fried rice

Another day, another fried rice recipe for your tasting pleasure.

Ingredients:

6 cups, cooked brown rice

4 chinese sausages, cooked according to package instructions and diced

1 baby bok choy, sliced thinly

1 carrot, peeled and chopped

3 ribs of celery, chopped

4 scallions, sliced

1/2 bunch cilantro leaves, rough chopped

1 cup frozen peas

2 eggs, whisked

2 Tbsp sesame oil

1/4 cup soy sauce

4 Tbsp butter

3 cloves garlic, minced

Directions:

Add sesame oil to a large wok or frying pan. Heat until shimmering, over medium heat.

Add the white part of the onions, and sauté until slightly softened. Add carrots, celery, peas, and bok choy. Sauté until veggies are slightly softened.

Add rice and sausage to vegetables, and stir to combine. Move rice, sausage, and veggie mixture to the outside of pan, creating an open well in the middle.

Add whisked eggs to the middle of the pan, and continue whisking until eggs are cooked and scrambled.

Once eggs are cooked, combine with all other ingredients.

Add garlic, butter, and soy sauce, again combining.

Let sauté until rice starts to crisp up in different areas. Stirring occasionally- about 5 minutes.
